- 2 tbsp fresh mint and coriander sauce instead of 2 tbsp green chutney. Commonly found in the world food aisle; provides the same fresh, herbaceous flavour profile.

Serve as a light lunch or a snack on its own, perhaps with some toasted sourdough or papadums on the side.
Serve immediately in a wide bowl while the potatoes are still warm for the best texture contrast.

Peel and dice the 2 boiled potatoes into bite-sized cubes. Heat 1 tsp ghee in a small pan over medium heat and lightly sauté the potato cubes for 2-3 minutes until they have a golden edge.
Done when: The potato edges turn a light golden brown and feel slightly crisp. Avoid over-stirring, or the potatoes will break apart into mash.

Assemble the Chaat
In a mixing bowl, combine the sautéed potatoes with the 0.5 cup boiled peanuts. Add the 0.5 tsp rock salt and mix gently to ensure the potatoes are seasoned.
Done when: The salt is evenly distributed and the peanuts are warm. Ensure the potatoes have cooled slightly so the yogurt does not curdle when added.

Add Yogurt and Chutney
Pour the 0.5 cup whisked yogurt over the potato-peanut mixture and stir gently for 1 minute until the potatoes are evenly coated. Drizzle the 2 tbsp green chutney over the top and garnish with the 2 tbsp chopped coriander leaves until the dish looks bright and creamy.
Done when: The mixture is creamy, well-coated, and looks vibrant with the green herbs. Avoid over-mixing once the yogurt is added, or the texture will become too thin.
