- 1/4 cup plain Greek yogurt instead of 1/4 cup curd. Provides the same tang and binding properties.
- 1/2 cup finely diced red or green bell pepper instead of 1/2 cup capsicum. This is the standard UK name for capsicum.

Cook the Appe
Just before cooking, stir in 1/2 tsp of baking soda to ensure a light texture. Heat an appe pan on medium heat and drizzle a little of the 1 tbsp vegetable oil into each mold. Spoon the batter into the molds and cook for about 3-4 minutes until the bottom is golden brown and the edges look set.
Done when: The bottom should be firm and golden brown with set edges. If the batter is still runny in the center, do not flip yet or they will break.

Flip and Serve
