    In a large mixing bowl, combine 1 cup cooked sama rice, 0.5 cup singhara flour, 0.25 cup grated fresh coconut, 0.5 cup curd, 1 tsp cumin, and 1 tsp rock salt. Add 2-3 tbsp water as needed to form a thick, spreadable batter, mixing well to ensure no lumps remain.

    Done when: The batter should be thick enough to hold its shape on a spoon but loose enough to spread; avoid adding too much water, or the pancakes will be difficult to flip.

    Cook the Pancakes

    Heat a non-stick tawa or flat pan on medium heat and grease it lightly with 1 tbsp ghee. Pour a ladleful of the batter onto the pan, spreading it gently into a small circle, and cook for about 3-4 minutes until the edges turn golden and crisp.

    Done when: The edges look dry and golden brown, and the bottom releases easily from the pan; if the pancake sticks, the pan is likely not hot enough or needs more ghee.

    Finish and Serve

    Flip the pancake carefully and cook the other side for another 2 minutes until golden brown. Once cooked through, garnish with a sprinkle of chopped coriander leaves and serve immediately while warm.

    Done when: The pancake is firm to the touch and golden on both sides; ensure the centre is cooked through so it does not feel doughy.
