The 2-3 small green chillies provide the heat; use only one for a milder flavour or omit them entirely to remove the heat.

Can't Find Something?
- 4 medium green cooking plantains instead of 4 medium raw banana. Plantains are the standard UK supermarket substitute and provide the exact same texture and starch content.
- 1 tsp sea salt instead of 1 tsp rock salt. Sea salt is a perfect flavour equivalent if rock salt is unavailable.
Make It a Meal
Serve warm with a side of plain Greek yoghurt or a fresh mint chutney for a balanced breakfast.
Serve these warm with a side of fresh green chutney for a complete breakfast.

Step by Step Instructions
-

Prep the Bananas
Boil 4 medium raw bananas in a pot of water until they are tender and soft, about 15 minutes. Once cooled, peel the skin and mash the bananas thoroughly in a large mixing bowl until smooth.
Done when: The bananas are soft enough to be pierced easily with a fork; ensure they are fully cooled before peeling to avoid burning your fingers.

Mix the Ingredients
Add 0.5 cup crushed peanuts, 1 inch grated ginger, 2-3 chopped green chillies, 0.25 cup chopped coriander leaves, and 1 tsp rock salt to the mashed bananas. Mix everything well until you have a uniform, firm dough.
Done when: The mixture should hold together like a firm dough; if it feels too sticky, add a few more crushed peanuts to help bind it.

Shape the Patties
Divide the mixture into 8 equal portions. Roll each portion into a ball and gently flatten it with your palms to form a thick, round patty about 1 cm thick. This creates a consistent shape that ensures even cooking throughout the patty.
Done when: Patties should be uniform in thickness to ensure they cook at the same rate; avoid making them thinner than 1cm or they may break during frying.

Pan-fry the Patties
Heat 1 tbsp ghee in a non-stick pan or tawa on medium heat. Place the patties in the pan and cook for 4-5 minutes per side, adding more ghee as needed, until they are golden-brown and crisp on the outside.
Done when: The patties are golden-brown and crisp on the outside; avoid turning them too early, as they need a firm crust to hold their shape.

Why It's Good for You
Raw bananas are a staple ingredient that provides a unique texture and are known as a source of resistant starch1. The inclusion of peanuts adds substantial nutritional value, as they are a legume that provides plant-based protein, unsaturated fats, and fiber2. This combination makes these patties a heart-friendly addition to your morning routine2. Bananas are also an excellent source of potassium, which supports muscle contraction and helps maintain a healthy fluid balance in the body3. By choosing to prepare these at home, you are using whole ingredients to create a nourishing meal that supports your daily energy needs4. As with any change to your diet, especially if you are managing a health condition, please plan your meals with your doctor or a registered dietitian to ensure they align with your specific needs.
