- 2 tbsp coriander leaves, chopped

## Method

1. **Prepare the Base.** Heat 2 tbsp ghee in a heavy-bottomed pan on medium heat. Add 1 tsp cumin and let them splutter, then add 5 g curry leaves and 2-3 chopped green chillies.
2. **Sauté Sweet Potato.** Add the grated sweet potato to the pan. Cook for about 8-10 minutes on medium heat, stirring occasionally, until the sweet potato is tender and lightly golden.
3. **Add Seasoning.** Stir in 1 tsp rock salt and ¼ cup crushed peanuts. Cook on medium heat for 2 minutes, stirring constantly until the peanuts are lightly toasted and the salt is evenly distributed throughout.
4. **Garnish and Serve.** Turn off the heat completely. Fold in ¼ cup grated coconut and 2 tbsp chopped coriander leaves, tossing gently for 30 seconds until the coconut is warmed through and fragrant, then serve immediately.

- Ensure the sweet potatoes are grated evenly so they cook at the same rate.
