## Ingredients

## Method

1. **Prepare the Base.** Peel and mash the 4 boiled potatoes in a large mixing bowl until smooth. Add 1 tbsp grated ginger, 0.25 cup chopped coriander leaves, and 1 tsp rock salt, mixing everything thoroughly.
2. **Shape the Tikki.** Divide the potato mixture into 8 equal portions. Shape each portion into a flat, round patty using your palms. Gently press each patty into the 0.5 cup of sesame seeds so they are evenly coated on the outside.
3. **Make the Chutney.** In a small blender, combine 1 cup mint leaves, 1 small green chilli, 1 tsp lemon juice, and 2 tbsp water. Blend until smooth to create a vibrant green chutney.
4. **Pan-fry the Tikki.** Heat 2-3 tbsp ghee in a heavy-bottomed pan or tawa over medium heat. Place the patties on the pan and cook for about 4-5 minutes per side, until the sesame crust turns golden brown and crispy.
