## Ingredients

### For the Gravy
- 1 bunch spinach (about 250 g)
- 1 onion (chopped)
- 1 tomato (chopped)
- 1 tsp ginger garlic paste
- 1 green chilli
- 1/2 tsp cumin seeds
- 1/2 tsp garam masala
- Salt to taste
- 1 tbsp oil

### To Finish
- 200 g paneer (cubed)
- 1 tbsp cream (optional)

## Method

1. **Blanch the Spinach.** Blanch spinach for 2 minutes, plunge into ice water and blend smooth with the green chilli.
2. **Cook the Masala.** Temper cumin in oil, sauté onion, ginger garlic paste and tomato until soft.
3. **Add Spinach and Paneer.** Stir in spinach puree, salt and garam masala. Simmer 3 minutes, then fold in paneer.
4. **Finish.** Swirl in cream if using and serve hot.

## Tips

- Don't over-cook the spinach — it keeps its bright colour.
- Add a squeeze of lemon to boost iron absorption.

## How to serve

Serve with phulka or jeera rice.
