## Ingredients

### For the Potato Shell
- 4 medium boiled potato
- 2 tbsp tapioca or sabudana flour
- ½ tsp rock salt, none

### For the Stuffing
- ½ cup roasted peanuts, crushed
- ¼ cup grated coconut
- 1-2 small green chilli, chopped
- 2 tbsp coriander leaves, chopped
- ¼ tsp rock salt, none

### For Frying
- 3-4 tbsp oil or ghee, none

## Method

1. **Prepare Potato Dough.** Peel and mash the 4 boiled potatoes thoroughly in a large bowl until smooth. Add 2 tbsp sabudana flour and 0.5 tsp rock salt, mixing well to form a soft, non-sticky dough.
2. **Make The Stuffing.** In a smaller bowl, combine 0.5 cup crushed roasted peanuts, 0.25 cup grated coconut, 1-2 chopped green chillies, 2 tbsp chopped coriander leaves, and 0.25 tsp rock salt. Mix everything together evenly to create a fragrant, crunchy filling.
3. **Shape The Patties.** Divide the potato dough into 8 equal portions. Flatten one portion in your palm, place a teaspoon of the peanut stuffing in the center, and fold the edges over to seal it into a smooth patty.
4. **Shallow Fry Patties.** Heat 3-4 tbsp oil or ghee in a non-stick pan over medium heat. Place the patties in the pan and fry for about 3-4 minutes on each side until they turn deep golden brown and crispy.

## Tips

- Ensure potatoes are completely cooled before mashing to prevent the dough from becoming sticky.
- If the patties feel too soft, add an extra tablespoon of rice flour to the potato mix.
- Serve immediately while hot to maintain the crisp texture.

## How to serve

Serve hot with fresh green chutney for a complete Navratri snack experience.

## Why it's good for you

Potatoes are a versatile vegetable providing carbohydrates, protein, and dietary fibre [1]. Incorporating potatoes into traditional snacks has been shown to contribute to physiological defense through their antioxidant activity [1]. When processed, such as through frying, the mineral availability of potato-based products can improve, specifically increasing the accessibility of iron and calcium [2]. Peanuts and coconut add complementary textures and nutrients to the blend, with research noting that blends of potato, coconut, and peanut have been studied for their ability to provide functional nutritional profiles [3]. As part of a balanced diet, these ingredients offer a satisfying energy source for your fasting days. Always plan significant dietary changes with your doctor or a registered dietitian to ensure your nutritional needs are met.
